Viral Crispy Tortilla Beef Kebabs

Viral Crispy Tortilla Beef Kebabs

Salam, friends! It is so good to have you back in my kitchen. Today, I’m sharing something that bridges the gap between the traditional koftas of my childhood and the quick, modern meals my family craves on weeknights. These Tortilla Beef Kebabs are a bit of a clever trick—crunchy, juicy, and so simple to put together.

To start, we need about 2.5 lbs of ground beef. I like to mix this in a large bowl with a finely chopped red bell pepper, a quarter of a red onion, four cloves of garlic, and plenty of fresh parsley. For that warm, aromatic flavor, we’re adding a tablespoon each of paprika, cumin, garlic powder, oregano, salt, and pepper. Give it a good mix until everything is well incorporated.

Now for the fun part! Take six large flour tortillas and trim the rounded ends off to make them into squares. Spread a thin, even layer of that seasoned beef right onto each tortilla. Once they’re covered, cut each tortilla into four smaller squares. To make the skewers, you just flip and stack them so the meat stays tucked inside, then cut again into smaller bite-sized stacks before sliding them onto your skewers.

I’m bringing out my favorite Portable Vertical Hanging Charcoal BBQ Grill for these. If you haven't tried a vertical smokeless grill yet, it is a game-changer for home cooks! It gives you that authentic charcoal flavor without filling the patio with smoke. Hang the skewers and let them sear beautifully on each side. While they cook, I brush on a bit of chili oil. This is the secret to getting that tortilla extra crispy and adding a lovely little kick of heat.

Serve these while they’re hot and the tortilla still has that perfect snap. No fuss, just delicious, smoky flavors. Enjoy, everyone!
