Sizzling Cumin Lamb Skewers

There is something so nostalgic about the scent of lamb and cumin wafting through the garden. In my kitchen, we love flavors that remind us of the Silk Road, and these skewers are a family favorite. They are simple to prepare, but the key is patience—letting that marinade really soak into the meat makes all the difference.

To get that perfect street-food char without the mess, I’ve been using my G-More Vertical Smokeless Charcoal BBQ Grill. It’s wonderful because the meat hangs vertically, allowing the fat to drip away while the smoke circulates perfectly. Here is how I make them.

Ingredients

  • 500g lamb leg meat (choose a cut with a little fat so it stays juicy)
  • Half an onion, sliced
  • 5 slices of ginger
  • 2 tbsp light soy sauce
  • 2 tbsp cooking wine
  • 1 tbsp vegetable oil
  • Cumin powder, chili powder, and salt
  • Whole cumin seeds (for that extra crunch)

Preparation

Prep the Lamb: Wash the lamb and pat it dry. Cut it into bite-sized chunks, making sure each piece has a little bit of fat.

The Marinade: In a bowl, toss the lamb with the onion, ginger, cooking wine, salt, cumin powder, soy sauce, and oil. Mix it well with your hands—really get those flavors in there. Cover and refrigerate for at least 4 hours, though overnight is always better.

Fire up the Grill: When you're ready, remove the meat and discard the onion and ginger. Light the charcoal in your G-More Vertical Smokeless Charcoal BBQ Grill and let it get nice and hot.

Skewering: Thread the lamb onto your skewers. To make sure your spices stick, lightly brush the meat with a little oil, then sprinkle generously with chili powder, cumin powder, salt, and extra cumin seeds.

The Roast: Hang the skewers into the vertical rack of the G-More grill. Close both the charcoal chamber lid and the main lid. This keeps the heat even and the smoke contained.

The Finish: You can peek in whenever you like! They are ready when the lamb is golden brown and you see those beautiful juices dripping.
